In trying to talk my parents in to trying a vegetarian diet to help with some health problems, and various conversations with our dear [livejournal.com profile] ebee where cooking has come up, I've heard two things about vegetarian cooking: vegetarian cooking doesn't taste good, and it takes forever.

Not true. Here's a quick and easy recipe for a tasty vege pizza:

Ingredients:

1 red bell pepper, chopped
1/2 cup sliced white mushrooms (portabello if you prefer)
5-8 basil leaves
1 small onion, finely sliced
2-3 cloves of garlic
1 cup mozarella cheese
oregano (fresh or dried), chopped
1 pizza crust
pizza sauce (obvious, eh?)

Lightly brush a pizza crust with olive oil (I use Boboli or similar available pre-baked in the store) and then spread sauce (you can also buy pre-packaged pizza sauce) evenly over pizza with a rubber spatula or wooden spoon. Use half a basil leaf per slice, sprinkle the oregano, top with peppers*, mushrooms*, and onions. Bake at 350 for 8-20 minutes or until crust is slightly crispy and cheese is melted.

And there you have it, tasty food in half an hour or less.

* = to roast red peppers and onions, chop and then place in a foil packet. Drizzle the vegetables lightly with olive oil, seal packet, and place in an oven at 450 for 10-12 minutes.
